If you modify the fat content in food, energy intake tends to follow along with it. Now, how efficiently does the body process fat for storage? This is a depiction of the difference in the efficiency of energy utilization after a fitness meal fitness of low- or high-fat food (Figure 72). This table is compiled from a number of different literature studies on the topic. The low-fat diet is about 20% fitness fat, the other is 40% fat. The table shows that if you take people at energy balance and look at the thermic effect of food, which is the energy cost of processing the nutrients following a meal, you will find that even at energy balance there is a 30 kcal difference per day in the amount of energy you need to expend to do something with a lower-fat diet. A high-fat diet is more efficiently utilized even when there is no increase in total energy balance. And 30 kcal a day is not insignificant. What happens when you overeat? In the Vermont prison studies, volunteers were relieved of the boredom of sitting around and reading, and they got to overeat over a period of 3 months in some cases, and up to 7 months in others.
